Our 3 ingredient series continues! This time we were challenged by Taiwo to create a recipe using a type of bread, chicken and pepper. Be sure to go send her some love for being apart of bringing this dish to life.
Once we were given these ingredients we both had the same idea in mind to do a stuffed chicken but weren’t sure on how to incorporate the bread and the chicken. Erica came up with the idea to do a jalapeno popper style sauce to top off this delicious chicken and Michael decided that we should bread the chicken for a crispier taste.
It may seem as if its a lot that goes into this recipe but you will surely be thankful for the amount of time you put into the dish because the taste is magnificent.
here is the recipe for our breaded stuff chicken roll up with a cream cheese and jalapeno sauce.
Ingredients:
Croutons (Italian seasoned)
15 oz. ricotta Cheese
4 eggs
your favorite sliced cheese
vegetable oil (or frying oil of choice)
thinly sliced boneless chicken breast
seasoned salt
pepper
Paprika
onion powder
garlic powder
chili powder
For Sauce:
2 tbsp butter
1 Pkg Cream Cheese
1 jalapeno pepper (de-seeded and diced)
1/4 cup milk
Directions:
For Chicken:
in a frying pan, heat frying oil of choice (about 4 cups of oil)
preheat oven to 375 degrees
In a Ziploc bag add bag of croutons, seal ziploc and crush croutons until they become crumbs. Add crumbs to a medium sized bowl and set aside.
In a small bowl add 1/2 container of ricotta, 1 egg, then mix until smooth. Add all seasonings to your liking and mix.
In a separate bowl beat 3 eggs and set aside.
After washing your chicken, pat dry, season with seasoned salt and pepper to taste on both sides, lay out on a board, add a 1/2 slice of cheese, a dab of ricotta mix being sure not to over fill the chicken. Roll up the chicken and secure with 2 tooth picks going diagonally for full security.
dip chicken roll ups in the egg then in the croutons, then place in heated oil to lightly fry then placed on a lined baking sheet.
once all roll ups have been lightly fried, place in oven to finish cooking (about 20-30 mins.)
For Sauce:
add butter and cream cheese to a medium sauce pan, once cream cheese has melted down, add in diced jalapeno, add milk and season with salt and cumin to taste, stirring consistently until all ingredients are fully incorporated and the jalapeno becomes fragrant.
Remove chicken from oven, remove toothpicks and take a spoon full of your sauce and drizzle over chicken roll up.
We put our chicken over homemade mashed potatoes!
