Every day we look for specific recipes when we run out of idea or are just way too tired to put a ton of thought into a quick meal. Although we eat chicken and seafood we aren’t the biggest fans of beef so whenever we want different meat options we opt for vegetarian “beef.“ Vegetarian “beef” is one of our favorites to experiment with. We have tried everything from beef and broccoli all the way to vegetarian steak and cheese which you can find the recipe for here. This time we wanted to try a different recipe, vegetarian “beef” stew.
As Fall approaches its time to get back to warm recipes which makes this the perfect meal!
Here’s how to make this flavorful family friendly vegetarian beef stew:
2 Cups Vegetable Broth
Vegetarian Beefless Tips (We used Gardein brand)
Take out your vegetarian beefless tips to thaw.
Dice your potatoes (1/2 inch thick) then set in a bowl of water while you prep the remaining ingredients
Dice your onions & cut your the beefless tips in half
Add some olive oil to a large pot then throw in the diced onions
while waiting for your onions to sauté a bit, toss your beefless tips in flour and then add to pot with onions, season with thyme, sage, garlic powder, salt and pepper, then let cook for about 5 mins.
Finally add in your carrots, green beans, drained diced potatoes, and your vegetable broth. (if extra liquid is desired add in a cup of water). add in more seasoning, stir and let this mix cook for about 20-30 minutes or until the potatoes are easy to poke through.
When potatoes are thoroughly cooked, your vegetarian beef stew is ready to be served! If you would like you can serve it over a bed of rice.
