Cake-Like Corn Bread Recipe To Top Off Any Meal And Make Your Heart Sing

Sides are an essential part of making a meal, it helps pull together an entree by boosting the flavor. In Southern cooking, you’ll find that the most essential part to the meat, mac n cheese and greens is a moist side of corn bread.
Corn bread is a common and traditional side that people of all lifestyles seem to enjoy. The sweet and buttery flavoring is what gives corn bread the upper hand in enhancing the meals overall flavor. All of our lives our family has used Jiffy mix, that is until Erica perfected her own recipe. Boxed cornbread no longer exists in our home.
This recipe is not too sweet and not too salty while still maintaining the proper amount of moisture. Mix all of these things together and your heart and stomach will sing!

Let’s jump right into it!

The Ingredients

Wet:

4 Eggs

1 Cup Milk

1 tsp Vanilla Extract

3/4 cup melted butter

Dry:

1 Cup cornmeal

2 cups flour

1 1/2 cups sugar

1 tbsp baking powder

1 tsp salt

The Directions

Preheat oven to 350°

Grease baking pan of choice

Combine all wet ingredients and mix then combine all dry ingredients and mix. Pour into greased pan and bake for about 30 mins, checking periodically to be sure it’s cooking throughout and not burning.

QUICK TIPS

● Before adding other wet ingredients be sure to lightly mix the eggs so you don’t have clumps of yolk in your mix.

●Sift in your flour so it helps give a smoother batter.

● Grease your pan with butter so it gives the outside of your corn Bread an extra bit of yum!
